After its original 12 years of aging in traditional barrels, this D.O.C. balsamic vinegar of Modena is aged another 4 to 6 years in cherry wood casks. Thick and syrupy with smooth, sweet flavor, this is a balsamic to be treasured. The ‘Acetaia del Cristo’ is a small farm situated north of Modena in Italy.
The Barbieri Family starts the production of the worldwide famous Traditional Balsamic Vinegar of Modena from their own biologically grown grapes. For several decades the Barbieri Family has been passionately dedicated to the ancient values and traditions handed down for generations. Grapes utilized are Trebbiano and Lambrusco grapes.
Production is not from a single cask, but the BATTERIA or Vinegar making set, is composed of a minimum of 5 to a maximum of 10-12 casks normally made of different woods. In fact each wood gives a different aroma to the product. Typical woods are: oak, chestnut, cherry, juniper and mulberry. A very particular characteristic of this farm is to carry on using the ancient techniques, even if the production level is as high as 1300 casks.
