Winemaker Notes - We time the picking of the Sauvignon blanc based on the acidity of the grapes so we are looking for a vibrant core of acid to provide the focus and length to the wine. The solids in the ferment provide tannin structure and a pleasing grapefruit finish which enhances the length. In a cool year such as 2011 we promote the acid and tannin to allow a small amount of natural residual sugar to remain in the wine providing texture and a little weight. The Sémillon adds another dimension to the wine and gives it an ability to age far more gracefully than a 100% Sauvignon blanc blend. This 2011 is fresh and fragrant with mineral chalk characters, citrus notes and hints of tropical fruits.
