Wine Maker
Tom and I ventured into the barrel room in search of the perfect Cabernet Sauvignon. I had an opinion of what I thought that Tom was looking for, the typical California Cabernet, over the top fruit and over ripe flavors. I put together a blend that exemplifidy those points, as good as it was it wasn't what Tom was looking for. As we talked and discussed the philosophy of wine, I began to realize Tom's vision. Tom was looking for something closer to the Super Tuscans of Italy and I had the perfect wines to create that blend. Sangiovese's minerality and Cabernet Franc's herbal tendancies would balance the wine perfectly. As Tom and I tasted this blend we realized that the wine would rock the world. The resulting wine is deep Garnet in color with aromas of Black Cherry, Current and Blackberry. Full bodied, rich and balanced in the mouth the firm but supple tannins give way to Red Plum, Black Cherry and Blackberry. The long finish is compelling and irresistable.
