Sauvignon Blanc is an incredibly vigorous grape found predominantly in France and California, and also in New Zealand, South Africa. This grape grows to the extent that it requires frequent grooming of the canopy to maintain appropriate sun exposure, otherwise the resulting wine will be fairly bland and unremarkable. An appropriately ripe Sauvignon Blanc grape will have a very aggressive nose, which can feature intense mineral aromas, as well as herbaceous, vegetal, and fruity notes. The grape doesn’t pull any punches when it comes to taste either; expect high acidity making for a tart and zesty wine that can compete with almost any food out there.
