Silver Oak 2004 Cabernet Sauvignon Napa Valley Tasting Notes - This mature, well-built Napa Valley Cabernet is a luscious, deep brick-red color. Ripe black-cherry flavors and a cassis core, are nicely integrated with sappy French oak tannins. These firm, yet resolved tannins are supple, silky and elegant on the finish, allowing for both short-term enjoyment, or a long term reward, when cellared. This wine pairs well with petite filet mignon grilled over mesquite and served with a sun dried tomato confit seasoned with fresh marjoram and sea salt or accompanied by soft polenta made with Mascarpone and finished with Reggiano Parmesan and fresh cracked pepper.
