Winemakers Notes - Thierry's appellation is Cornas, in the northern Rhone, where he works exclusively with Syrah. His techniques are rigorously traditional, and his eye is on the highest possible quality. He has taught us much over the years - about determining harvest ripeness, for instance, and about grape processing, barrel aging and bottling.
Because our idea of making a traditionally produced northern Rhône Syrah originated after our talks with Thierry, he is the 'Honoree' of this wine.
To capture all of the character that's in these grapes we follow a strict program of traditional winemaking. We crush these grapes by foot, not by machine. The wine is aged one year in barrel on the yeast lees, untouched. We make the only SO2 addition at the time of bottling. There is no fining or filtration. The results will fascinate you.
You'll find the heady aroma of blueberry and bacon fat. You'll taste the luscious flavors of licorice and black pepper, enveloped with exotic fruit. 100% Syrah.
