St.Aubin is a village from the Cote de Beaune area, neighboring the great villages of Puligny and Chassagnes-Montrachet. Generally, wines from St.Aubin commend a lower price than those of their more famous neighbors, however, 1er Cru St.Aubin such as this one are no less spectacular. Le Chomplot was made by a husband and wife team who are committed to naturally limit their production. They restrict grape production to 5 clusters per vine and do not treat their vineyards past mid July. We were captivated by the elegance and superb aromatic profile of this wine which we found reminiscent to a Puligny-Montrachet.
Very luminous and lively, with strong notes of almond pastry on the nose. On the palate it offers hazelnut and buttery croissant aromas supported by a solid mineral structure. A stunningly pleasant acidity ends the experience. What a treat!
