Armagnac is considered to be the ancestor of Cognac as it is much more ancient spirit.The key difference between Cognacs and Armagnacs is that the later is only distilled once and therefore is cut with much less water than its more popular counterpart. Armagnac is the region of Southwest France in Gascogne where the famous and ancient spirit bearing its name comes from. Armagnac is considered to be the ancestor of Cognac as it is a much more ancient spirit. Parchments found in the Vatican's library dating back from the year 1310 mentions the production of the spirit in Armagnac, making it the most ancient liquor of France. Interestingly enough, the good friar who wrote the tasting notes of the original product found no less than 40 virtues to the Armagnac Eau de vie! The key difference between Cognacs and Armagnacs is that the later is only distilled once and therefore is cut with much less water than its generally better known and mass produced counterpart.
