The emblem of the Chateau: It is always difficult to name this wine. This is the main wine of Château. It may represent up to 200,000 bottles. We often call the "Classic" wine or "Grand Vin". This wine is the basis of our production. This is the wine that we bring a lot of attention. Indeed, it is this amount to be broadcast around the world. It must be the very image of the excellent terroir of Château La Nerthe. This wine is the synthesis of our different terroirs. It gathers grapes from relatively young and others from old vines with proven qualities vines. It gathers grapes from very stony soils of the plateau of Crau and those from sand and marl soil beneath it. The form is an exciting year where the tasting of the grapes to maturity is the key. Winemaking: The grapes will be harvested at their optimum and will be assembled in different wine tanks in an order defined in the vineyard. Each cuvée prepared when the wine is intended for specific breeding. All winemaking operations will be carried out in respect of territories which are the wines. These wines will be kept separate until the end of the breeding. The winemaking take place slowly at a controlled temperature, in stainless steel tanks and in wooden vats. Pumping over and punching down are made regularly. Their intensity and frequency is determined by tasting. The maceration lasts 18 to 20 days. Then the wines are sold in the stone tanks to conduct their malolactic fermentation. At the end of this second fermentation that can last from two weeks to a month, the wines are placed in barrels. Depending on the vintages, they will be directed to small new casks of wine or two of wine, or to large oak casks and wooden vats. They will stay there for 12 months. At the end of the operation shall be another important moment: the assembly. The different vintages were made to be complementary and constitute the great wine. But sometimes, some problems may occur and it will, in the tasting, decide on amendments. This is a memorable moment. Once assembly is complete, the wine will rest for a few weeks in vats before being bottled at once to minimize the differences between the first and the last bottle.
