The enigmatic maritime nose slowly yields soft notes of ship's varnish and brine, sweetness and distant smoke, giving but a faint hint of the palate to come. The flavour starts sweet and gentle, with balancing acidity and saltiness, then quickly intensifies as it develops a minerally, toasty and finally peppery character. The overall effect, like the long drying finish, is reassuringly warming. Adding a little water gives a slower, fruitier start from which that peppery warmth still emerges. 45.8% ABV.
