Harkening back to their winemaking roots,they aged the flagship No. 209 Gin in used wine barrels from their sister winery Edge Hill Estate, the original birthplace of Distillery No. 209. They hand-select French oak barrels that once housed the Edge Hill Bacigalupi Chardonnay and other noted California Chardonnays and age their No. 209 Gin for approximately 4 months. A sweet and almost fruity entry followed by a gin-inspired mid-palate with juniper, cardamom, orange and a hint of eucalyptus create a distinctively different spirit with toasted oak and pronounced butterscotch notes.
