Clos de Choue is a vineyard located in the Côte Chalonnaise, spanning 4.5 hectares and featuring a sloping south-facing amphitheater shape. The grapes undergo destemming and a five-day cold soak before fermentation using native yeast. Gentle foot-treading is employed for crushing, and pumpovers are conducted once daily. Aging takes place in barrels, with 70% of the cuvee aged in a combination of new and one to two-year-old barrels. The remaining portion is matured in concrete tanks. After 14 months of aging, the cuvee is blended and bottled a month later.
