This Gin starts with whole grains of organic California Red Winter wheat, which Spirit Works mill, mash, ferment, and distill - entirely on site at the distillery. This meticulous process maintains the distinct characteristics of the grain, creating our round and slightly sweet base spirit. It is classically distilled with juniper berries, to which they add both traditional old-world and fresh California botanicals. There are earthy notes from orris and angelica root, spicy notes of cardamom and coriander, bright citrus notes from hand-zested orange and lemon, as well as floral hibiscus. This harmonious balance creates a gin that is best described as traditionally dry, yet freshly unique.
